
This summery recipe for Fruit Pizza has been in our family for over 50 years. My mother-in-law used to make it regularly. She was not a cook by any stretch of the imagination, but she loved this recipe because it was so easy and she could often bamboozle Grandpa Larry into making it for her. It is an old Pillsbury recipe and is still featured on their website. Pillsbury promotes this recipe because it features a package of their refrigerated pre-made sugar cookie dough for the crust.
The instructions on my ancient recipe card vary ever so slightly from the current recipe on Pillsbury’s website. Here are the changes I made: I only used about 1 T of sugar rather than the 1/3 cup they used. Their current recipe calls for apple jelly, but you can use any sort of jelly. I used orange marmalade and mixed in a tablespoon of water to make it easier to brush over the cream cheese mixture. I also only baked the cookie for 12 or 13 minutes. The minimum baking time.
You can use all your delicious summer fruits and let the kids help you arrange them decoratively. Everyone loves this recipe, and it is wonderfully easy to take to a potluck.

These tomatoes were sitting on Ryan’s counter when we went over for homemade pizza on Sunday night. He always has a summer garden, and this year’s tomatoes have been excellent. He’s been woefully plagued with gophers this year, so a number of his veggies didn’t do well, but the tomatoes have been unscathed.
I am planning on having a little vacation at the end of this week- more of a long weekend. My sister Andrea and I are flying up to Gig Harbor, WA to stay with our niece Lizz. My sister Kate will be there as well, another niece, and some cousins. A Ladies’ Weekend! I can’t wait to see everyone. We have gotten so spread out now that all the nieces and nephews are grown and have started their own families. I have really been looking forward to this!

Ladies weekend— so fun! Enjoy. Maybe a quilt shop to explore?? I was at a dinner party a couple of weeks ago— our hostess served the fruit pie, except the base was a huge round slice of watermelon cut through the middle. It was heavenly— so light for the summer. She used yogurt for the icing and just decorated it with the plain fruit. I will definitely make this for summer parties!
