
Happy 4th of July if you are an American who celebrates. We had a lovely quiet day, with an evening barbeque at my son in law’s house. He made his amazing ribs and a tri tip that could have won an award. I contributed a Southwest style black bean and corn salad that was the best I have ever made. The secret ingreditent wasn’t in the recipe: I added a diced mango and it was amazing!
The recipe is from SkinnyTaste and is fantastic. Just add in some diced mango and you will have my version. It made quite a lot: it fed 9 people and Dennis and I took the leftovers home and had them them next day with a grilled steak. Highly recommend.

This photo is from a 4th of July when Eva was about 3. It is my favorite 4th of July memory ever. She was so excited to hold up a sparkler and celebrate America’s birthday. She looks like a symbol of hope for the future. I am so grateful for my wonderful family, the fabulous memories we have made, and my good fortune of being born in America.

I just finished a book where the setting was a cruise ship wedding. That would be so much fun!

Thanks Sally. It was a quiet celebration for us, but we could hear all sorts of festivities nearby until quite late. Our neighbor’s kids had sparklers and little fountain type fireworks in their driveway. It brought back memories!
