
Still no sewing. I’ve been spending my days reading some terrific books. Hope to get back in the swing of things this weekend. Meanwhile, here is another recipe I think many of you will enjoy. Boursin Chicken, a recipe I got from Belly Full (a good source). I have made this several times, and it is always a success, and could even be a fancy dinner for guests. But it’s so easy and fast you will find yourself making it on busy weekdays as well.

What you need is a pound of chicken breasts (or a bit more is fine). The recipe uses cutlets, but I cut my chicken into small pieces. Also, mushrooms, garlic, wine, and a type of spreadable cheese you can find in the deli section. Boursin. I like the garlic and herb version. The recipe makes a nice sauce, so you could serve it over rice or pasta. I had half a box of fusilli (rotini) so that is what I used.

Sauté those seasoned chicken bits until they have some color but aren’t quite done. Remove them from the pan and then cook those sliced mushrooms while the pasta water heats.

Not the best picture, as I was all out of fresh parsley for a garnish, but I can tell you it was delicious, and made enough for two meals for Dennis and I. He liked it a lot and said it was as good as what you might get at a restaurant. High praise!

Nothing makes us happier than making our men happy! Looks delicious. Good to take a break from sewing once in a while— I’m off on a Memorial Day adventure and could use the break. Not even bringing a hand stitch project! Have a lovely weekend. xoxo
We get a lot of recipes from Belly Full, all chicken, pork, or turkey because we still cannot eat beef after those Lone Star tick bites years ago and that’s a bummer!

I have never heard of Belly Full? I seem to be in the dark. I will go luck. have a safe wonderful weekend and enjoy your sewing room. I can’t wait to get to mine tomorrow. I’m just need to put borders on a quilt and then I can move on to figuring out the backing. sewing keeps me sane…..
