
We had a terrific Easter celebration. I hope you did too, if you celebrate. This little lamb is featured most years on our Easter table. We call him the Sacrificial Lamb. He is made entirely of Rice Krispy Treats and surrounded by jelly beans.

We inherited these antique lamb moulds from my husband’s mother. She and my father-in-law used to make a Rice Krispies lamb centerpiece every Easter as long as I knew them. When they passed away, it became my job.

The process is very straightforward; you just make your basic Rice Krispies Treat mix, pack it into both sides of the moulds, then bolt them together. That’s where the hubby’s help comes in handy: we need some muscle power for the squishing and bolting together tightly. In a couple of hours, it has set up and comes out of the mould, and there you go- one sacrificial lamb centerpiece!

The other thing I like to make for Easter is hot cross buns. They were my dad’s favorite, and I always make a batch of them in his honor. I kind of lost my finesse when I was putting the crosses on, but I know he’d forgive me.

In the evening, we did something really different instead of a typical Easter dinner. My son in law Ryan made homemade pizzas in his backyard, and let me tell you, that was an amazing experience.

Eva was a great assistant. Yes, that is Eva, six inches taller and tan already from swimming every day in February and March. And, yes, her legs are a mile long.

Ryan must have made five or six varieties of pizza. We had pepperoni, and pizza margherita, but some really unusual ones as well. This one was pizza with prosciutto and arugula.

This one had a very fancy Italian name, but featured lemon predominantly. It was amazing.

We ended with this one, which may have been my favorite. Ryan and Eva made it up on the spot. It was a S’Mores pizza. No graham crackers, but it sure had everything else that mattered. Lots of chocolate and marshmallows, charred to perfection. It was so good! Someone you know may have had two pieces.
As you can see, it was a day full of good times, great food ( and calories!). It was an Easter to remember, and loads of fun.

Your Easter feast looks amazing! I loved the sacrificial lamb, rice Krispy treats is a great idea. Looks much friendlier than some of the cakes I’ve seen. Having pizza is awesome. What a splendid day…🌷
