
I don’t know about you, but throughout the summer I’m always looking for great side dishes to serve with grilled foods. I recently discovered a recipe for Mexican Street Corn Salad by Love and Lemons that will be in my regular rotation over the next few months, and I think you will love it too.
I made the recipe exactly as written, and it was delicious. You do need to grill four ears of corn in advance and cut the kernels off. Ideally, you will get a bit of char on the corn that will both look and taste great. If heating up the grill ahead of time is too much of a pain, you can cut the kernels off and saute them in a pan on the top of the stove and achieve basically the same effect. We have a gas grill outside, so grilling at the drop of a hat is pretty easy.
The main ingredients of this salad are the corn, a jalapeno pepper, green onions, and cilantro. If you don’t like cilantro, I don’t know what to say…Just kidding, use parsley instead. The only slightly unusual ingredient called for is a crumbly Mexican cheese called “Cojito”. Most supermarkets have it, but you may have to ask where. I think this ingredient shouldn’t be skipped, but if you must, you can substitute feta cheese.
The secret to this wonderful dish is the dressing, which is a combination of mayo, lime juice, and a bit of minced garlic. I added a tiny bit of chile powder, but you could use paprika.

Do give this a try! I don’t think you will be disappointed.
I wanted to give you a heads-up that this summer I may be posting a bit less frequently; maybe three times a week rather than four or five. Eva will be spending more time with me, for one thing, which means I will be busy interacting with her (or driving her somewhere). Additionally, I have not been doing a ton of sewing and have found myself spending more time reading. You can expect some quilting content, of course, as well as more recipes and book suggestions. Posting on fewer days will take a bit of pressure off and help ensure my content remains interesting.

But was able to find them. We haven’t skipped the shrimp a single visit! Thank you for broadening my menus!
