Blueberry Zucchini Bread

Here is an easy recipe you might enjoy–especially if you have a garden full of zucchini!  It is a pretty basic zucchini bread recipe with the addition of blueberries.  No nuts in this one, but don't see why you couldn't add them.  I ended up with five mini loaf pans, not the four the recipe states.  This was as good as the picture looks, maybe better.  Give it a try, you won't be sorry!  (From allrecipes.com).

Blueberry Zucchini Bread

Ingredients

  • 3 eggs, lightly beaten
  • 1 cup vegetable oil
  • 3 teaspoons vanilla extract
  • 2 1/4 cups white sugar
  • 2 cups shredded zucchini
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 tablespoon ground cinnamon
  • 1 pint fresh blueberries

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease 4 mini-loaf pans.
  2. In a large bowl, beat together the eggs, oil, vanilla, and sugar. Fold in the zucchini. Beat in the flour, salt, baking powder, baking soda, and cinnamon. Gently fold in the blueberries. Transfer to the prepared mini-loaf pans.
  3. Bake 50 minutes in the preheated oven, or until a knife inserted in the center of a loaf comes out clean. Cool 20 minutes in pans, then turn out onto wire racks to cool completely.

  1. Looks YUM! I always replace all that oil with half applesauce. You get the same moist results but it’s a little healthier. Can’t wait to try it!

  2. I will have to try this one too – you have got some good recipies, girl! First the blueberry baked french toast, then the corn & blackbean salad (had that last night – yum) and now this…I have an excellent chocolate zuc. bread…I’ll have to post sometime (haven’t made it this year).

  4. I make this but I put only 1 3/4 cup sugar and put in a cup of Black Walnuts. Won first place at the fair with it. It also freezes really well. I have 8 loaf’s in the freezer right now. Enjoy those.

  5. This will be perfect! We are camping our 5th wheel this week and I brought along a zucchini and blueberries from our garden. I haven’t done much baking in the 5th wheel but was going to look for a recipe today.
