Ears of Corn and Tomato Pie

Lots of corn kernels around here. I'm making good progress on the Let's Pop Some Corn pattern and am still having fun. These blocks take some time to make, but they sure are cute. I should finish these today and move on to the setting stars. This is coming together nicely.

We have a guy near us who sells fresh produce he grows on his property. His name is Fast Eddie. He is a retired UPS driver and kept his professional nickname now that he has a produce stand. We've been going on Saturday mornings and stocking up on tomatoes.

I decided I'd use this bounty of tomatoes to make a tomato pie yesterday. It was recommended that I salt the tomatoes and let them drain their extra liquid to avoid having a soggy pie, so that is what I did. Aren't they beautiful? The technique works-lots of liquid drained off and my pie wasn't soggy.

My recipe for tomato pie calls for fresh basil and green or red onion.

Layer the tomatoes, basil, onion, and lots of cheese.

It was an easy and delicious summer meal. My crust edges got kind of brown. Should have used foil around the edges to prevent that. It didn't affect the delicious flavor of the pie though!

  1. That new method for the corn looks so much better. Cleaner lines. It will be so fun when it’s finished. I love a good tomato pie!

  2. I love tomatoes from the garden. Our crop were lousy this year. They looked beautiful but they were tough with little flavor. So disappointing.
    Those ears of corn are going to look so cute on your table this fall. You should place your crows on top. It would make the most fun table setting.

  3. Yay, you! I’m so glad you’re liking the ears of corn runner enough to push through! The tomato pie recipe looks delicious! I’ve been making a cold pasta salad with carrots, cherry tomatoes, cucumber, red onions & sharp white cheddar. Cold & refreshing in this hot weather!
