
No sewing has been happening the past couple of days. The weather has been nice, so I’ve taken a few walks around the neighborhood. Archie seems to know if it is around 10 AM, and starts looking at me expectantly. “Will she? Will she?” He’s pretty hard to resist. I’ve written in my journal, read some books and generally just vegged out.
What I do have to share is an easy weeknight dinner anyone could make. It is Ham and Swiss Cheese Sliders. You take a pack of Hawaiian rolls and slice them through the middle horizontally. Spread with a very tasty mixture of mayo, Dijon mustard, honey, and chopped pickled jalapenos. Toast the rolls under the broiler, top with the mayo mixture and layers of Swiss cheese, ham slices, and cheddar. Put the two halves of the rolls together and bake for a while until the cheese gets melty. Fast, easy, and everyone loves them. They’d be a great Game Day snack too.

I served them with a simple salad, and dinner was done. The leftovers make a great lunch for the next day too.

Holy smokes Nicole! April has indeed been unkind to you! I’ve been traveling (Ireland)for the last 2 weeks and didn’t have wifi (long story)so unable to read your posts. I’m so sorry about your missing quilt. It’s every quilters nightmare!

Thank you Kerry! It hasn’t been fun around here for a while. In addition to all the havoc I wrote about, we were planning to be in Ireland this month. In fact, we were to depart today. We had to cancel the trip because of my new eye issues. (I can’t miss an injection). Hopefully things will settle down and we can reschedule and go this fall.

It was very disappointing, plus, we lost a lot of money on deposits, event tickets, etc etc. Yes, the past month has been pretty wretched.
Those sliders would be delicious for dinner any day of the week! Your walks with Archie sound lovely. I’m sure he enjoys a change of scenery as much as you do! I’m sorry that you’ve had to cancel your trip to Ireland but, as you know, the shots are the priority. Nevertheless, I understand how disappointed both of you & Ahren must be! Book-to-movie adaptations sound interesting & I’ll put your podcast on while I’m sewing this afternoon.
I’ve made a variation of these but LOVE the idea of added jalapeños! Thanks so much for sharing- always enjoy your recipe selection. I’m at the age where thinking of menu items to make can be a struggle 🤪
