I don’t have much sewing to share this week, so I will try to make up for it with a delicious recipe I tried recently. This is Allrecipes’ version of Lemon Chicken and Rice Casserole, something that can be made all in one pan, from stovetop to oven.
This recipe went together like a dream. I first browned boneless chicken thighs in my Le Creuset pan. I removed them from the pan, then sautéed some garlic and rice and added various liquids, including broth and lemon juice. The browned chicken gets added back into the pan, which is now covered, and put in the oven for half an hour or so to cook the rice.
It was very attractive, nice enough to serve to guests, but also easy enough for a weeknight meal. And it made leftovers for another meal for my husband and me.
What have I been doing? I have been starching fabric now that our weather is balmy and more spring like. Mostly, I have been reading. February started out as kind of a “meh” reading month, because I was bogged down by a couple of books that I really wanted to read, but just wasn’t getting into. I managed to get past that stumbling block and have read a couple of books that were so good I didn’t want to put them down. I look forward to sharing them with you next week.
I do plan to sew this weekend and next week as well. Dennis has been going to the Bay Area for his infusions on his own, leaving me at home with Archie, so I will have plenty of time to putter around in the sewing room. Maybe I will make some more blocks in the Celebrate America 250 sew-along. I am ready to tackle the six-inch blocks now, which I will enjoy more than those pesky little three-inchers I did first.
Have a fantastic weekend, everyone!

Wishing you a wonderful weekend of sewing! And maybe a bit of spoiling for Archie?? 😁🐾🐶
Hope your weekend is grand as well!
Sunshine makes everyone feel happy and full of inspiration to go outside and enjoy! We had one day of sunshine! Finally (didn’t last long though) we were able to go outside and just soak in the sun – while doing the chores that needed doing. The ground almost dried up to a tad sticky mud, so no working on the veg. But we were able to harness the alpacas and take them for a walk. They don’t look like long necked mud monkeys now, but showing their true colours. Hoping to turn the fleece into batting eventually.
Alpacas are such funny looking creatures. They seem to have loads of personality and would be fun to raise.
YOU HAVE ALPACAS???!!!!!
Yes, 3 boys to act as fox guards as we had been losing some of our ducks. The little fawn/brown one is my favourite, his eyes are gorgeous – and such long lashes. Beginning to look like teddy bears now. I need to wait a while before I can collect enough fibre for a quilt! 😀
that’s it. I’m going to England to visit Kerry…..anyone want to join me?
You’d be welcome – just give me advance warning to clean up the sewing room!
Yes!! 🥰
Dennis, Archie, and I watch a tv show called The Yorkshire Vet. Archie loves it so much, we call it “his show”. There are something like 20 seasons of this program and over time we have come to adore the vets and their clients/patients. One of the regulars on the show is a woman who raises alpacas, so we have learned a bit about them. They are so full of personality and make the weirdest noises. I can see why people love having them.
Ah yes, my husband is a James Herriott fan – and the Dales are beautiful, been there many times, thoroughly recommend a visit there, lots of Viking history in York. We are in Devon, south west England.
Here in Connecticut we had a blizzard with 12 inches of snow plus what was already on the ground from other storms last Sunday. This weekend we don’t have a storm predicted and it looks like maybe 40 degrees will be our days. The sun is shining today and everyone is in a better mood !! Let the snow melt. Enjoy your weekend !
I feel so bad for the terrible weather the East Coast has gotten lately! I lived in Michigan as a little child, and recall my parents calling March “Mud Month” because of all the melted snow. It was a mess.
My weekend will begin with a flight to warm(er), sunny Florida for a couple of weeks with my sister! I’m looking forward to our time together doing whatever sounds like fun! ☀️🌺🌴
That sounds fantastic Jan! Enjoy every beam of sunshine and minute with your sister.
I have been in a severe reading slump triggered by The Warmth of Other Suns.
It was well written, but not compelling. I ended up only being able to listen to it in the car, where I was a captive audience. The librarian who assigned this book, for one of my book groups, also found herself in a reading slump for the same reasons.
Reading slumps are real.
They sure are. I had been reading my second book by an author whose first book I had really enjoyed. With this second one, however, the plot was so convoluted that I had a terrible time keeping up with what was going on. I would pick up the book, read a couple of pages and put it down. It took me forever to get through the darn thing and of course, I wasn’t reading other books I would have enjoyed more. Ugh.
Yum! That recipe looks worthy and those ingredients means it’s bound to be delicious – thanks!
Wishing Dennis well and know you’ll have fun sewing up a storm and playing with Archie.
Hugs!
It was really a good recipe Barbara. Very citrusy, so keep that in mind if you make it. Next time I might use a bit less lemon juice.
I hope you have a lovely weekend!
