Let Them Eat Apple Cake

I picked up this magazine at the grocery store the other day.  I love Cook's publications since the recipes are super well tested and come out great more often than not.  A collection of their All Time Best Recipes was too good sounding to pass up.  I have been browsing through it and decided to give one of the recipes a try.  I am not a terrific baker, but the recipe for Apple Cake was irresistible.

I made my list and stopped at the store on the way home, and started flinging bowls and pans around as soon as I came through the door.

This recipe involves dried apples!  Boiled in apple cider until soft, then pureed in the food processor until mushed.  The dried apples were a bit off putting to cut up, as they reminded me of ears.  Sorry.  I put that image out of my mind, and you must too.

Here is my effort, ready to pop into the oven.  My sugar dusting skills are a little weak, as it seems the sugar did not get distributed very evenly.  No matter.

So was this big old pile of dirty bowls and utensils worth it?

This is what I'm eating this week.  Being on your own means you can eat cake for dinner every night if you want to.  That's it.  I am on the apple cake diet.

  1. The cake looks (and I am sure) tastes fantastic. I’m with you about Cook’s Illustrated – bought their Italian Favorites recently – made the Spaghetti & Meatballs – I highly recommend it.

  2. Sounds yummy. Just don’t go eating it when you miss Hubby. Bad Road to go down, trust me, been there, done that. And had the weight to prove it.

  3. I saw that magazine and almost picked it up. I thought it was just cakes though. Now I may have to go find it!
    The cake looks yummy. I usually do cereal for dinner when my Hubby is away, which will be tonight! So excited!

  4. We get that magazine, also. I like the fact that they work the recipes untill they get the best possible way to fix something. The latest issue has a lengthy article and recipe for the best shortbread cookie recipe.
    An apple cake all to yourself! How lucky are you!?!

  5. Wow…. I’m hungry just looking at the pictures!! How nice it would be to be on an apple cake diet. Unfortunately I don’t think the family would be too impressed with nothing but cake… although… it would only take a day or two for it to be all gone… so maybe we could do it!! Hope you enjoyed it!! Did you lick the plate clean too??

  6. ooo I tried that recipe too! Loved it.
    Wish I could eat cake for dinner.. My 2 older boys moved back in and now it’s a must to have a balanced dinner on the table every night. Good thing I don’t work full-time! Just want to say, love your blog!
